It’s always a pleasure to go out and train bar staff in a new bar, restaurant or hotel. Ulrich headed North West to the award winning Da Vinci’s on the banks of the River Foyle
THE city of Derry is famed for many things – Derry Girls, the Clipper Race, our famous walls, city tours and water adventure on the River Foyle and of course food and drink.
It’s a city where one of the biggest Halloween carnivals takes place, it boasts a buzzing nightlife and the food and drink scene is celebrated regularly.
Da Vinci’s Hotel is on the banks of the River Foyle is one place which has a superb food and drink offering. It has an overall reputation for its food and drink, customer service, quality accommodation and location so we are thrilled that the multi award winning hotel is now stocking our Symphonia range.
Ulrich recently travelled to meet with the Da Vinci’s team who work across all the different bars in the hotel. It has a traditional Irish Main Bar, The Grillroom, The Style Bar, the Lobby and Caterina’s Restaurant.
Caterina’s is a classic, modern bistro offering a carefully crafted menu where the chefs have taken locally sourced produce and turned it into international cuisine. The Main Bar serves gastro pub food and has a real traditional Irish feel.
The staff here are brilliant, and they loved our Dry Gin, Apple Gin and Fruit Cup.
Symphonia Dry Gin, is a beautiful harmony of flavours including rose, basil, dandelion and flowers.
Symphonia Apple Gin, is truly unique. No-one makes anything like this gin. Ulrich explained to the Da Vinci’s team that we were always going to use the Bramley Apple in one of our products as we wanted to capture the crisp, tart apple taste.
Symphonia Fruit Cup is a summer fruit drink inspired by the raspberries and strawberries grown in the garden here at The Woodlab Distillery. Ulrich told the bar staff thathe wanted to produce something slightly different to a pink gin but recognised the incredible rise in popularity of this category. The result is like a pink gin but lower in sugar and alcohol. It’s a summer fruit drink which is different but complimentary to the two gins so all three will go down a treat with Da Vinci’s customers.
They all loved learning about the different servings for each of the spirits. A huge thank you to Da Vinci’s. The bottles look fantastic on the shelf.

NOTES TO EDITOR:
- Symphonia is a range of handcrafted Irish spirits celebrating produce grown in the Irish countryside. The sophisticated Dry Gin is of exquisite complexity. The crisp Apple Gin is made using Co Armagh Bramley Apples and the Fruit Cup is a delicious summer fruit spirit drink. Symphonia is distilled at The Woodlab Distillery by Dr Ulrich Dyer who uses cold distillation to preserve flavours which are lost during traditional distillation.Â
